Chicken Soup
w/ herbs

Ingredients

-1 Whole chicken, cut into 6-10 pieces (I prefer ones directly from the Amish farms)

-1 Large garlic clove

-1 Lemongrass stalk

-1 Cup red angelica (Duck Feet Red) herb

-1 Cup artemesia (wormwood) herb

-2 Dates cut in half

-1.5 Tsp salt

-1/2 Tsp black pepper

-9 cups of water (or until water slightly covers chicken)

 

INSTRUCTIONS

 
  1. Clean excess feathers on chicken and cut into 6-10 pieces.

  2. Gently pound the lemongrass stalk with a pestle or meat mallet until the lemongrass is bruised.

  3. Crush the garlic clove and cut the dates in half.

  4. Place chicken into a pot and add water so that the chicken is mostly covered in water.  

  5. Add salt, black pepper, crushed garlic, and lemongrass.

  6. Bring to a boil and cook on medium to high heat.

  7. Once the chicken is almost cooked, add in the herbs and dates.

  8. Boil until meat is fully cooked and herbs have softened.

    Total Cook time: 20 minutes
